When I check the oil on the dip stick, it is clear, but I just drained it, it is pretty black, so why is the oil on the dip stick clear(clean)?

Maybe you drained something other that the Engine!

Well, the plug I pulled is below the big pulley at rear of mule, it sure looked like it was to an oil pan, the bolt head on the plug was

Yes that was the oil pan plug.
If the engine has sat for a long time then the oil could be clearer than normal on the dipstick. The contaminates in the oil could settle during long periods of non use making the oil look darker upon draining than draining after running.
If your fuel pump diaphragm is cracked it will allow fuel to enter the oil pan and could cause the oil to look clear on the dipstick. This situation is seen by high oil levels on the dipstick.
Run the engine and get it warm about 10-15 minutes. Change filter and oil. Keep a watch on it.
