Will any other steering wheels fit the mites? or do you have to use any original?

None that I'm aware of and it looks like I bought the last one Surplus City had but they do show up every now and again.

I've seen an aftermarket 3 spoke adapted. I'm ASSUMING it was the original column.

NOS steering wheels are available, but scarce and expensive. (Ron Alred, Surplus City, etc.)
Wheels with cracked plastic, and even light rust can be repaired. (I have successfully repaired a few steering wheels for other restoration projects in the past.)
Eastwood has a number of kits, supplies, instructions for the project:

Kit prices range from $25 to $50.
